Almond Day

February 16th is National Almond Day, so we must celebrate accordingly!

Vanilla Almond Oatmeal with Blueberries

  • 1 cup vanilla or regular almond milk
  • ½ cup water
  • ¼ tsp. salt
  • ½ cup steel cut oats
  • ½ tsp. vanilla extract
  • ½ tsp. almond extract
  • ¼ tsp. cinnamon
  • ½ T honey
  • Toppings: almonds & blueberries
  1. Bring milk, water,and salt to a boil in a saucepan.
  2. Add oats, cover, and reduce heat to a simmer. Cook for about 10 to 20 minutes.
  3. Remove from heat and stir in remaining ingredients.
  4. Top with blueberries and almonds!

 

 

Almond Joy Shake

  • 1 scoop Chocolate Shakeology
  • 2 T almonds (or 1 tsp almond milk)
  • 1 cup almond milk
  • ½ tsp coconut extract
  • Ice
  1. Blend all ingredients together in blender and enjoy!

 

 

Almond Lover’s Shake

  • 1 scoop Strawberry Shakeology
  • 1 tsp almond butter
  • 1 cup almond milk
  • ½ tsp almond extract
  • Ice
  1. Blend all ingredients together in blender and enjoy!

 

 

Honey Almond Mug Cake

  • 1 T coconut flour
  • 1 T almond flour
  • 2 T quick oats
  • ¼ tsp baking powder
  • 2 T unsweetened almond milk
  • 1 large egg white
  • 1 T honey
  • 1 tsp almond butter
  1. Mix together the flours, oats, and baking powder in a microwave-safe mug or bowl until well combined.
  2. Add milk and egg white, stirring until no clumps remain.
  3. Next, add in honey and almond butter. Stir the batter gently, making sure that all the ingredients are fully incorporated.
  4. Microwave on high for 2½ to 3 minutes. Keep a close eye on it!
  5. Remove from microwave, top with an additional drizzle of honey (optional), and enjoy!
