Blueberry Pie Overnight Oats

  • ½ cup old-fashioned oats
  • ¼ cup plain nonfat Greek yogurt
  • ¼ cup milk of choice
  • 1 tsp vanilla extract
  • 1 T chia seeds
  • ¼ cup blueberries
  1. Place all of the ingredients in a mason jar or plastic container with a tight-fitting lid. Stir until thoroughly combined.
  2. Cover and chill overnight. Serve cold and enjoy!

Blueberry Pie Smoothie

  • 1 cup water
  • 1 cup frozen or fresh blueberries
  • 1 scoop vanilla protein powder
  • 1 tsp vanilla extract
  • ½ tsp pure vanilla extract
  1. Place all ingredients in a blender and pulse until smooth!

Blueberry Pie Oatmeal

  • 1 cup frozen or fresh blueberries
  • 1½ T water
  • 1 T honey
  • ¼ tsp vanilla extract
  • Pinch of salt
  • ½ tsp cornstarch
  • ½ cup dried oats, cooked
  1. In a small saucepan, combine the blueberries, water, honey, vanilla extract, and pinch of salt. Stir to combine, then sprinkle on the cornstarch and mix evenly.
  2. Bring to a boil, then let simmer for 5 minutes, or until thickened.
  3. Serve on top of oatmeal.

Blueberry Pie Mug Cake

  • ¼ cup + 2 tablespoons whole wheat flour
  • 1 T coconut sugar
  • ¼ tsp baking powder
  • ¼ cup almond or coconut milk, at room temperature
  • 2 T unsalted butter, melted and cooled
  • ½ tsp pure vanilla extract
  • ¼ cup fresh blueberries
  1. In a small bowl, whisk together flour, sugar, and baking powder until completely combined.
  2. Add in milk, butter, and vanilla; stir until batter is smooth.
  3. Fold in blueberries and pour batter into a greased microwave-safe mug.
  4. Microwave on high for 1 1/2 to 2 minutes, or until cake is done to your liking.
  5. Allow to cool for a couple of minutes before serving.
