Caramel Apple Delight

I don’t know why, but I’ve had a hankering for caramel apples these past few weeks. It probably means I neither need to fly down to Disney World to visit the Candy Cauldron in Downtown Disney or I need to visit a fair sometime soon. I guess I could also search out a Kilwin’s or Peterbrooke’s Chocolate, but neither of those are close by. Due to all of these obstacles, I’ve been trying to satisfy my cravings at home! I had to admit, the nachos alone satisfied my cravings – I think I even prefer it this way!!

 

Caramel Apple Overnight Oats

  • 1/2 T butter or coconut spread
  • 1 small apple, diced
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • Pinch of cloves
  • 1/2 cup unsweetened almond or coconut milk +
  • 1/3 cup Greek yogurt
  • 1/2 tsp vanilla
  • 1 T chia seeds
  • 1/2 cup oats
  • 1/4 cup walnuts
  • 3 caramels
  • 1 T coconut milk
  • 1 tsp coconut spread
  1. In a small skillet, place butter/coconut spread. Once melted, add apples and sprinkle with spices. Stir to coat.
  2. To the skillet, add 1/4 cup water and bring the mixture to a slight boil. This will cook the apples without burning them. Continue to cook, stirring and adding additional water until apples are fork tender. Remove from heat and cool.
  3. In a mason jar or container, mix together milk, yogurt, vanilla, and chia seeds. Whisk until yogurt is fully incorporated. Add oats and stir again.
  4. Pour apple mixture on top, followed by nuts. Seal and chill overnight.
  5. Before serving, make caramel sauce by heating caramels, 1 tablespoon coconut spread, and milk in a microwavable bowl. Pour caramel sauce over oats, stir, and enjoy!

 

Caramel Apple Shake

  • 1 cup water or unsweetened almond milk
  • 1 scoop vanilla protein powder
  • 1/4 cup unsweetened applesauce
  • 1 tsp caramel extract
  • 1/4 tsp cinnamon
  • Ice
  1. In a blender, pulse together all ingredients until smooth. Enjoy immediately!

Caramel Apple Nachos

  • 1 apple
  • 3-4 caramels
  • 2 T coconut milk, divided
  • 2 tsp coconut spread, divided
  • 2 T chocolate chips
  • 2 T walnuts
  1. Slice one apple into thin slices and arrange on a plate.
  2. In two bowls, place 1 tablespoon milk and I teaspoon coconut spread. In bowl bowl, add caramels and in the other bowl add chocolate chips.
  3. Cover lightly with a paper plate or towel and place bowls in microwave. Heat for 30 seconds, stopping to stir ever 10-15 seconds to ensure nothing burns.
  4. Once melted, pour caramel and chocolate syrups over apples and sprinkle with walnuts. Enjoy!
