Strawberry Day

If you’re anything like me, you love a good bowl of fresh strawberries. Growing up in the South, we use strawberries to accessorize all sorts of sweets – from poundcake to pancakes; from ice cream to yogurt. And sometimes, we make them the star of the show and eat them plain! In honor of National Strawberry Day, here are just a few of my new-found favorite recipes!

Banana Split Pancakes

  • 1/2 cup oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon cardamon
  • 1/4 teaspoon all-spice
  • 2 eggs
  • 1/4 cup applesauce
  • 1 banana
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips
  • Toppings: maple syrup, strawberry jam/jelly, sliced bananas, fresh strawberries, Greek yogurt
  1. Place oats and spices in a blender or food processor; blend until oats are ground up.
  2. Add eggs, applesauce, banana, and vanilla. Process until incorporated.
  3. Meanwhile, heat a griddle or skillet. Pour batter onto the griddle and top with chocolate chips. Cook for 3-4 minutes on one side, until edges appear cooked.
  4. Flip over and cook for 3-4 more minutes.
  5. To serve, top with your favorite syrup, jam/jelly, yogurt, or fresh fruit!

Strawberry Peach Yogurt Bowl

  • ⅔ cup 2% Greek yogurt
  • 1 scoop Vanilla Shakeology
  • 5 strawberries, chopped
  • ½ peach, chopped
  • 1 T sliced raw almonds
  1. Combine yogurt and Shakeology in a small bowl; mix well.
  2. Pour yogurt mixture into a bowl and top with berries, peaches, and almonds.

Strawberry Overnight Oats

  • ½ cup old fashioned oats
  • ½ cup milk (I use unsweetened almond)
  • ⅔ cup 2% Greek yogurt
  • 1 teaspoon chia seeds
  • 1 cup strawberries, chopped
  1. Place oats in container (I use a mason jar) and pour milk over them. Layer Greek yogurt with chia seeds and strawberries.
  2. Refrigerate overnight and enjoy the following morning!

Strawberry, Peach, Pear, & Apple Salad

  • 1 cup salad greens
  • 5 strawberries, chopped
  • ½ peach, thinly sliced
  • ½ pear, thinly sliced
  • ½ apple, chopped
  • 1 teaspoon sliced almonds
  • 1/4 cup tomatoes, diced
  • 1/4 cup cucumbers, diced
Salad Dressing
  • 1/3 cup fresh orange juice
  • 1/4 cup olive oil
  • 1 T Dijon mustard
  • 1 T honey
  • 1 T apple cider vinegar
  • 1 T poppy seeds
  1. Mix together salad dressing ingredients and set aside. Note: it will make more than needed for this recipe.
  2. Slice fruit and vegetables for the salad and toss with salad greens.
  3. Top with dressing and serve immediately!

Chicken & Avocado Spinach Salad with Strawberry Poppyseed Dressing

  • 1 cup salad greens
  • 3/4 cup chicken, chopped
  • 5 strawberries, chopped
  • ½ avocado, thinly sliced
  • 1 teaspoon sliced almonds
  • 1 teaspoon cheese of choice (I like feta)
  • 1/4 cup tomatoes, diced
  • 1/4 cup cucumbers, diced
Salad Dressing
  • 2 T strawberry yogurt
  • 2 T Greek yogurt
  • 2 T milk
  • 1 T honey
  • 1 teaspoon coconut sugar
  • 1 T apple cider vinegar
  • 1 teaspoon poppy seeds
  1. Mix together salad dressing ingredients and set aside. Note: it will make more than needed for this recipe.
  2. Slice chicken and vegetables for the salad and toss with salad greens.
  3. Top with dressing and serve immediately!

Strawberry Carnitas Bowl

  • ½ cup farro, cooked
  • 1 cup Romaine lettuce, shredded
  • 3/4 cup shredded pork
  • 2 T Strawberry Poppyseed dressing (see above)
  • 1/4 cup tomatoes, diced
  • ½ avocado, thinly sliced
  1. Place your shredded lettuce in a serving bowl or on a plate.
  2. Next, layer the farro and shredded pork.
  3. Place tomatoes and avocado slices on top, drizzling the dressing as the final touch.

Strawberry Quesadillas

  • 2 oz. cream cheese, softened
  • ½ tsp vanilla extract
  • 1 Flatout wrap (I prefer whole wheat)
  • 4-5 strawberries, thinly sliced
  • Butter or coconut spread
  • Cinnamon
  • Optional: whipped cream or Greek yogurt for topping
  1. In a small bowl, mix together cream cheese and vanilla extract.
  2. Butter one side of a tortilla, and sprinkle with cinnamon. Set aside.
  3. Spread cream cheese filling on one half of wrap, then top with sliced strawberries.
  4. Place butter side down on a warm pan or griddle and cook until golden brown. Clip and cook other side to golden brown, then remove from heat.
  5. Slice into 4 pieces and top with additional strawberries and whipped cream/yogurt. Serve warm.
